Being in the Hospitality and Chef industry for the past 20 years and more actively involved in training for the past 7 years, being in close contact with Industry requirements and the demands that are being placed on new arrivals in this industry, I came to realize the importance and need for teaching young aspirant chefs the fundamentals of becoming a chef in this ever expanding global hospitality environment. It is just as important to know your produce and how or where to source it from, than to cook it. Learners need to be able to identify quality produce in order to serve quality to their customers. The foundation that is being taught at the on-set of one’s career will carry you through for the rest of your time in this industry. The all importance of sourcing and serving food is equally as important as cooking the food. It is for this reason that SA Chefs Training & Innovation Academy has combined the City & Guilds curriculum with added subjects in order to equip the learner with the framework of knowledge that will ensure his sustainable success in industry.
