Offered Full time only and candidates will be selected at a Selection Board.

Applicants must complete the Commis de Patisserie in order to apply for selection.

 

This ground-breaking, advanced patisserie program teaches the learner advanced and complex patisserie techniques that will equip the learner with the necessary skills, knowledge- and culinary capacities to successfully enter the industry as a well-equipped patisserie chef. There is no other pastry program presently developed in South Africa that is of this nature, of this calibre and prepares you this well as a professional patisserie chef.

The program is a carefully selected, well balanced, and a very challenging 100% ‘hands-on’ program where the learner spends the complete year in an in-service apprenticeship at Salon de Culinaire under the personal tutelage of one of South Africa’s leading pastry chefs.  In addition to the advanced pastry program developed with Salon de Culinaire, learners will simultaneously complete the City & Guilds Advanced Management Diploma in Culinary Arts with the Patisserie Option. 

The entire one year program, both the City & Guilds and Salon de Culinaire components, is assignment based with frequent contact sessions at SA CHEFS TRAINING & INNOVATION ACADEMY.  Many industry based practical assessments and assignments will also be completed during this year.  The program is extremely intense, exceedingly complex and exceptionally labourious and only serious patisserie learners should apply for acceptance.

Please take note that due to the intensive, complex and demanding nature of this program where everything done is aimed at the total quality development of the patisserie student, every student who applies for this program will undergo a rigorous selection process and only the best applicants will be accepted.  Acceptance will be based on the student’s performance during his or her preceding training undergone at SA CHEFS TRAINING & INNOVATION ACADEMY.

Please do not consider this program if you are not a 100% serious and dedicated pastry chef.  This program has extremely high quality standards, is particularly specialised and has an enormous workload, but will, upon graduation, assuredly make the learner one of the best entry-level pastry chefs entering the job market.
